SO glad that you're here enjoying these uber simple, healthy, and tasty recipes. 
Below is a meal plan that you can use as a guide, and then mix things up with your own preferences and needs.

 

Breakfasts:

During Passover in my home, we generally have veggies and eggs of some sort!

 

*Scrambled eggs ( 2) with 1 T of Feta cheese and sauteed spinach

 

*Sauteed mushroom and onion omelet

 

*Pancakes with berries, and/or a little honey and cinnamon

 

*Almond Bread topped with Cashew butter, honey, and cinnamon

 

 

Lunches:

For lunches, we tend towards salads and/or sandwiches made of Almond Bread

 

* Romain salad with feta cheese, avocado, slivered almonds (or any nut you like), apple chunks/clementines, cucumber, and cilantro. It's SO good! 

 

*Romain salad with Passover Egg Salad, cilantro, and cucumber

 

*Salad with Passover Tuna Salad and baby tomatoes

 

*Sardines with lemon, onion, and cilantro and a slice of Almond Bread

 

*Cashew butter and jelly on Almond Bread. Don't be fooled...its super filling and you feel fabulous afterwards. Very different than a regular BP&J!

 

 

 

Snacks:

 

*Guacamole with carrot sticks or celery sticks 

 

*Almond butter with veggie sticks

 

*Toasted Almond bread with butter 

 

*Beet Salad

 

*Israeli Salad

 

 

Dinner:

This section is a little more bulked up because I figured you would be hosting some Yom Tove Meals :)

 

*Chicken Soup! -If you have a bowl of it with the actual chicken pieces, its a great dinner!

 

*Sweet and Spicy Roast served with Romain salad, beet salad, and Guacamole

 

*Finger Lickin Garlic Chicken served with Romain salad, Israeli salad, and avocado mango salad

 

*Honey Mustard Salmon served with any salads you like!

 

*Fried burgers served on almond bread as  a bun,  with tomato slices, mustard and guacamole on the side. 

Here it is! 

 

Here are your recipes and their ingredients!  

 

 

CHICKEN SOUP

Ingredients:

2 onions

2 carrots

4 stalks celery

1 package of chicken necks and one package of chicken bones

2 inches ginger

1 inch turmeric

1/2 bunch of fresh cilantro and/or dill

1 TB Pink Himalayan Salt.....here's a great one:

 

 

Directions: 

1. Peel and chop your onion into quarters, and throw it into your pot. 

2. Put your chicken necks and bones into a cheesecloth and tie it all up, and then throw it into your pot.

3. Chop your celery and carrots into 2 inch chunks and throw it into your pot.

4. Slice your ginger and turmeric into  and.....throw it into the pot! 

5. Chop of the cilantro and...... throw it into the pot! 

6. Add in your salt, and add water to cover everything.

7. Bring everything to a boil, and then reduce to a simmer. Let simmer on the stovetop for at least 5 hours.

Note:  When you are ready to serve you can take the bag of bones out but you don't have to!

 

 

Sweet and Spicy Roast (or Chicken) 

 

Ingredients: 

5 large sweet potatoes

2 large onions

1 roast or 2 packages of stew meat (TEVA brand is best!)

2-5 jalapenos depending on how much heat you like

1 cup Grape Juice or 1/3 cup Honey + 2/3 cup water

 

Directions:

1. Slice the sweet potatoes and put them in the bottom of a pyrex dish

2. Lay your meat on top 

3. Slice the jalapeno and put it all around the meat and pan

4. Add onion slices on top

5. Add salt and grape juice/honey water mixture and bake in the over covered at 350* for 2-3 hours. 

 

 

Finger Lickin' Garlic Chicken

 

Ingredients:

5 chicken legs

3 potatoes

handful of garlic cloves

1 TB garlic Powder 

1 TB onion powder

1 TB salt 

1/2 TB Pepper

 

Directions:

1. Slice potatoes and put them in the bottom of your pyrex baking dish

2. Put your chicken legs on top

3. Throw a handful of garlic cloves around the pyrex

4. Shake the garlic powder, onion powder, salt and pepper all over everything

5. Add about 1/2 cup water to the bottom of the dish and then cook covered at 350* for 2 hours, and then another half hour uncovered.

 

 

 

 

 

Honey Garlic Salmon

 

Ingredients:

1 Salmon Filet

4 TB Honey

2 TB Lemon Juice

4 cloves of garlic, chopped

Optional: fresh basil chopped

 

Directions:

1. Place the filet skin side down on a cookie sheet.

2. In a bowl, mix together honey, lemon juice, basil and chopped garlic.

3. Pour the honey mixture over salmon and cook at 350* for about 20 minutes, until the thickest part flakes easily. (cooking times vary depending on the size of your filet)

4. Serve and enjoy! If you want to make more honey+lemon mixture to serve on the side, people generally love that (but I leave out the garlic this time)!

 

 

 

 

BEET SALAD

 

Ingredients:

 

5 small beets

1 small onion

1 bunch cilantro

juice of 1 lemon

1 TB Cumin

salt to taste

1 TB Extra Virgin Olive Oil... here's a great one: 

 

 

Directions: 

 

1.  Roast whole, unpeeled (you can peel if you want, but there's no need to and I never do) beets in the oven at 350* wiped all over with olive oil.

2. Once beets are tender (about 45 minutes depending on their size),  remove fromthe oven and let cool.

3. Thinly slice your onion and then add it to the juice of 1 lemon in a glass bowl.

4. Chop the cooled beets into one inch chunks, and toss them into the bowl.

5. Chop up the cilantro and then add it to the bowl.

6. Add in the cumin, olive oil, and salt, and mix everything together. Serve and enjoy!

 

 


 

Israeli Salad

 

Ingredients:

1 box Persian cucumbers

1 small sweet onion (or any onion)

1 box cherry/grape tomatoes

juice of 2-3 lemons

salt and pepper to taste

Extra virgin olive oil

 

 

Directions:

1. Juice your lemons into a glass bowl

2. Chop up the onion into small pieces and submerge it into the lemon juice

3. Slice the cucumbers length wise, and then in half so you get "half moons"

4. Cut your tomatoes in half

5. Add your cucumbers, tomatoes, salt, pepper, and olive oil to the bowl and toss. 
6. Enjoy! It's soooo good! make sure to use FRESH lemon and enough salt to bring out the zing :)

 

 

 

 

Avocado Mango Salad

 

 

Ingredients:

1 mango

2-3 avocados

1/2 small purple onion 

juice of one lemon

1 Tb extra virgin olive oil

salt to taste

 

Directions:

1. Juice the lemon into a glass bowl

2. Thinly slice the onion and then put it into the bowl and let it sit in the lemon juice while you cut everything else

3. Chop up the mango into bite size cubes (I show a cool way in the video) and toss into bowl.

4. Chop up the avocado into bite sized chunks and toss into bowl.

5. Add the olive oil and salt, toss and enjoy!!

 

 

Pan Fried Burgers

 

 

Ingredients:

Ground beef

salt

pepper

 

Directions:

 

1.  Shape the ground beef into burger patties 

2. Fry the patties with salt and pepper on top at a medium high heat for a few minutes, and then flip. Cooking time varies on if you like it rare, medium, or well done.

3. Serve on Almond bread with sliced tomato and fried onions!

 

 

 

 

 

 

 

 

 

 

 

 

 

Pancakes!!!

 

Ingredients:

1 cup blanched almond flour  --> Click here to get it with passover certification  <-- 

3 eggs

1/2 banana

optional: cinnamon, berries, honey

 

Directions:

1. Put the almond flour, eggs, and banana into your blender and blend until smooth.

2. If its too thick you can add some almond milk or water

3. Fry in butter or coconut oil on a medium flame until it starts to bubble, and then flip. 

4. Serve with any combination of butter, honey, cinnamon, and berries. 

 

 

 

 Chocolate Chip Cookies

 

Ingredients:​​


1/2 cup Coconut Oil ....here's a great one for passover -->  
1/3 cup brown Sugar
1 ts vanilla extract
2 eggs
2 1/2 cups blanched almond flour 
1/2 ts baking soda 
1/4 ts salt 
1 cup of chocolate chips

 

 

Directions:

1. Pour the coconut sugar, the Almond flour, baking soda, and the salt into a bowl and mix together.
2. Push the dry ingredients to the side of the bowl and then put in your eggs, oil, and vanilla extract. 
 3. Mix together all your wet ingredients, and then stir it all together the dry ingredients. 
4. Add in the chocolate chips on stir.
5. Form little balls and place them onto a cookie sheet lined with parchment paper.
6. Bake in the oven at 350° for about 12 minutes.

Enjoy!! They freeze well. But good luck not finishing them suuuuper fast! 

 

 

 

 

Almond Bread

 

INGREDIENTS

* 4 cups blanched almond flour
* 4 tablespoons coconut flour
(* 1/2 cup flax seed meal) - optional
* 1 teaspoon celtic sea salt
* 1 teaspoon baking soda
* 10 eggs
* 2 teaspoons honey 
* 2 tablespoons avocado or extra virgin olive oil
* 2 teaspoons apple cider vinegar or lemon juice

 

INSTRUCTIONS
1. Combine almond flour, coconut flour, flax meal (is optional and considered kitniyot on Passover. You can replace it with almond flour), salt and baking soda. In S bowl 
2. Then mix in eggs, oil, honey and vinegar.
3. Pour batter into a well greased loaf pan or square Pyrex. It's pretty thick and you'll need to spread it with a fork or spatula.
4. Bake at 350º for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean.
5. Cool and serve like the badass you are!

 

 

 

Chocolate Chip Muffins:

 

 

Ingredients:
12 eggs
1 cup Coconut Flour   
1 cup Coconut Oil
2/3 cups coconut sugarSugar
1/2 cup chocolate chips
5 Tablespoons Cocoa Powder
1 Tablespoon Vanilla Extract 
1/2 teaspoon Pink Himalayan Sea Salt
1/4 cup Almond Milk
2 teaspoons baking powder

 

* Note -you can make this into a vanilla cake by leaving out the cocoa and chocolate chips!

 

 

Directions:

1. Preheat the oven to 350°. Line two 12-cup muffin pans with 20 cupcake liners.

2. Mix all the ingredients together in a bowl.

3. Pour the batter into the liners. 
If you want more of a flat top, fill it up 3/4. If you want a muffin top, fill it up almost to the top!

4. Bake the cupcakes in your oven for 20 minutes, or until a toothpick inserted into the center comes out clean.

5. Remove the cupcakes from the oven, and enjoy 💋

Makes about 20 cupcakes. Because it's always better to have extra cupcakes than not enough cupcakes.

ps- these freeze and defrost/reheat really well.

 

 

 

 

 

Simple and Yum Passover Egg Salad

 

Ingredients:

5 Perfectly Hard boiled Eggs

3 Tb Extra Virgin Olive Oil

1-2 sweet onions

salt and pepper to taste

 

Directions:

 

1. To perfectly hard boil your eggs, place them into a pot with cold water and bring to a boil on high heat.

2. Once they are boiling, turn off the flame and set a timer for ten minutes.

3. Once the timer goes off, immediately drain them and run cool water over them until they are cold. 

4. While the eggs are boiling, chop the onions into small pieces.

5. Saute them in olive oil and salt on medium high heat until translucent. 

6. Peel the hard boiled eggs and mash them up in a large bowl

7. Add in your sauted onions, and salt and pepper to taste

8. Mix everything together and enjoy!

 

 

Super Fresh Passover Tuna Salad

 

Ingredients:

2 cans of tuna

2 TB olive oil

juice of 1 lemon

1/2 small sweet onion

1/2 bunch of cilantro

salt to taste

 

Directions: 

1. Open the cans of tun and put it into a bowl

2. Cover it with the olive oil and mix it all together. This step is important because it keeps it from tasting "fishy"

3. Chop up the onion and cilantro into small pieces and mix everything together with the fresh lemon juice and salt.

4. Serve and enjoy!

 

Delicious Guacamole

 

Ingredients:

1/2 small sweet onion

Juice of one lemon

2 ripe avocados

salt to taste

 

Directions: 

1. Juice the lemon into a glass bowl

2. Finely chop the onion and place it into the lemon juice 

3. Scoop out the avocado and mash it up on a separate plate.

4. Mix the mashed avocado into the lemon+onion mixture, add salt to taste and enjoy!
