Nut Free Healthyish Chocolate Chip Muffins!
Hey love!
SO, lots of the time I try to make every baked good as healthy as possible so it's legit a real food.
That's not always ideal, or practical, or financially feasible, or realistic, or whatever.
In that case, then i like to make whatever baked good I'm making be, at the very least, a good compromise!

That's what these delicious Nut-Free Muffins are!!
Deeelicious, about a thousand times healthier than whatever regular recipe you're used to or that you'd pick up at a bakery, but still not quite healthy enough to be considered a real food.
That's totally fine with me!
Life sometimes asked you to compromise :)
Here's one of my favorites!
Here's the recipe:
Ingredients:
2 cups white whole wheat flour (or just unbleached white flour)
1/3 cup coconut sugar - you may want to double this depending on your pallet
2 ts baking soda
pinch of salt
2/3 cup whole fat coconut milk
1/2 cup coconut oil
2 eggs
1 cup of chocolate chips
1 ts vanilla
Directions:
If you're really on top of your game, preheat oven to 400*
In a large bowl, stir together flour, sugar, baking soda, and salt.
Push it to the side and add in the coconut milk, eggs, coconut oil, and vanilla.
Mix all the wet ingredients together and then stir in the dry ingredients.
Stir in the chocolate chips and the pour into muffin cups
Bake in the oven for 15-20 minutes, or until a toothpick comes out clean from the center.
These are awesome served warm, cold, aaand they freeze well too!!!
(I actually think they even taste good frozen....)
