Epic Basil Salad!!

This salad is so fabulous I’ve been eating it everyday for a week.

Yes, I might get sick of it eventually but for now I’m all smiles 😁😁😁

It’s so fresh and refreshing, I’m so in love with the basil!!

* note- only use FRESH herbs! Dried won’t come out good!!!*

Here’s the recipe for one serving 🥗

Ingredients:

1 Persian cucumber 🥒

6 cherry tomatoes 🍅

1 cup chopped FRESH basil 🌿

1/2 TB Sunflower 🌻 seeds

1 TB Avocado Oil

Salt and pepper to taste

Optional: 1 small squeeze of fresh lemon 🍋

Optional: 1-2 TB crumbled feta cheese

Directions:

  1. Chop the cucumbers into quarters lengthwise and then slice them width wise so you get nice little pieces and throw it in a bowl

  2. Chop the cherry tomatoes into quarters if they’re big, or in half if they’re small and throw them in the bowl

  3. Chop up your FRESH basil 🌿 into whatever size you like and throw it in the bowl. It will be awesome no matter what.

  4. Add the oil, salt, pepper and optional squeeze of lemon 🍋 and mix everything together.

  5. Sprinkle with sunflower seeds and optional feta, toss and serve immediately.
