Vegan Lunch Salad!

This awesome salad is super delicious, filling, and totally plant based!

This is essentially what my husband takes for lunch everyday, and now his partner does too because he was getting jealous πŸ˜‚

Here’s a pic of the double batch I made for them the other day πŸ™ŒπŸΌ

Ingredients:

1/2 bag of prewashed spring mix lettuce πŸ₯—

1/2 cup black beans

1/2 cup navy beans

1/2 cup organic fresh or frozen corn 🌽

1 whole avocado

1 fermented pickle

1 cup leftover Garlicky Green Beans

1 TB Raw Sunflower 🌻 Seeds

1/4 cup Creamy Ginger Sesame Salad Dressing

Directions:

  1. Throw the salad in a bowl, or Tupperware

  2. Throw both kinds of beans on top

  3. Chunk up the avocado πŸ₯‘ and throw it on top

  4. Throw the leftover green beans on top

  5. Cut up the pickle and throw it on top

  6. Throw the corn on top

  7. Sprinkle the sunflower seeds on top

  8. Drizzle the salad dressing on top!!

Toss just before eating! πŸ˜πŸ˜πŸ˜πŸ‘πŸΌπŸ‘πŸΌπŸ‘πŸΌ
