Vegan Lunch Salad!

This awesome salad is super delicious, filling, and totally plant based!

This is essentially what my husband takes for lunch everyday, and now his partner does too because he was getting jealous ๐Ÿ˜‚

Hereโ€™s a pic of the double batch I made for them the other day ๐Ÿ™Œ๐Ÿผ

Ingredients:

1/2 bag of prewashed spring mix lettuce ๐Ÿฅ—

1/2 cup black beans

1/2 cup navy beans

1/2 cup organic fresh or frozen corn ๐ŸŒฝ

1 whole avocado

1 fermented pickle

1 cup leftover Garlicky Green Beans

1 TB Raw Sunflower ๐ŸŒป Seeds

1/4 cup Creamy Ginger Sesame Salad Dressing

Directions:

  1. Throw the salad in a bowl, or Tupperware

  2. Throw both kinds of beans on top

  3. Chunk up the avocado ๐Ÿฅ‘ and throw it on top

  4. Throw the leftover green beans on top

  5. Cut up the pickle and throw it on top

  6. Throw the corn on top

  7. Sprinkle the sunflower seeds on top

  8. Drizzle the salad dressing on top!!

Toss just before eating! ๐Ÿ˜๐Ÿ˜๐Ÿ˜๐Ÿ‘๐Ÿผ๐Ÿ‘๐Ÿผ๐Ÿ‘๐Ÿผ
