Actually Easy and Yummy (not dense!) Meatballs

I tried making meatballs a few times over the years and always vowed to never do it again because they were too much work and never came out good.

Ugh.

Then I figured out these two little tricks that make it come out awesome every time even though I’m lazy and never measure ingredients. And I’m a health but and keep it Gluten Free.

Still, they’re bomb.

Here we go! 

Makes about 24 meatballs or 6 servings 👌

Ingredients: 

1 large white onion

2 TB Extra Virgin Olive Oil 

1/4-1/2cup coconut flour

2 eggs

1 ts salt

1 TB 21 Seasoning Salute/No Salt Seasoning Blend

1-2 ts Garlic Powder 

1-2 ts cumin

2 pounds ground beef 

Directions:

1.) Dice up the onion and sauté it in the olive oil with a ts of salt until translucent 

2.)Throw all the rest of the ingredients in a big bowl and mush it all together while the onions sauté 

3.) Once the onions are done (try to let them cool and then) add them to the mixture. Add as much coconut flour as you need for it to stick together 🙌🏼

4.) Form the meat mixture into meatballs about 1.5 inches in diameter and the place them on a cookie sheet that’s covered with parchment paper.

5.)Bake at 400* for about 15 minutes or until they’re done all the way through.

Serve immediately or later 😂😂😂😂

(Or freeze for later)

If you want them super saucy you can put them in a pan with tomato sauce to simmer for a few minutes or you can just drizzle it on top when you serve it- the latter is what I usually do.

The baking it keeps it from being dense and the fried onions make them amazingly delicious and moist.
